I recently started As You Wish by Cary Elwes. He writes about the Making of the Princess Bride and incudes a lot of anecdotes by other major players in the movie including many of the actors, the producer/director (Rob Reiner), the other producers and the author.
One funny anecdote I will mention is that they considered an alternate ending to the movie. The four heroes were to ride up to the house on white horses and call for the grandson to join them in their next adventure. They used three white horses for Westley, Buttercup and Inigo and a white Clydesdale for Andre the Giant. Andre's height and weight are in serious question, but he clearly was a huge man (probably close to 7 feet tall and well over 400 pounds). Apparently, when the Clydesdale realized that Andre was supposed to get on its back it made it very clear that was NOT going to happen! They used a special sling with ropes to suspend him over the horse and were going to paint them out in post-production. Fortunately, they decided not to use the scene.
